Dry aged in house, up to 75DAYS
A chef who trained in Italy and New York runs the chamber. He also cuts your steak.

The man cutting your steak cooked at Lupa.
Phillip Clary started cooking in Columbus twenty-five years ago. Ohio State, then Charleston, then Europe, where he picked up the Slow Food Movement. He trained at the International Culinary Center in New York, freelanced at Epicurious, and worked at Lupa Osteria. Then he came home and opened a butcher shop on East Main.
Opening Macelleria was the culmination of all of my travels and work experience.
Phillip Clary, Columbus Monthly, 2021
For what you get the prices are quite reasonable in my opinion.

Time is the only ingredient.
One room. Controlled temperature, humidity and airflow. The meat loses water, the flavour concentrates, and the texture changes. Nothing is added. Nothing is done to it but waiting.

Ribeye. The one most people start with.
Deeper, drier, more of everything.
For people who already know what they want.
Ask at the counter what is ready this week.
Every cut, and where it comes from.
Tap a section of the steer. A lot of these are hard to find in a grocery store.
Also: Beef Liver, Suet, Tallow, Soup bones, Marrow bones, Neck Bones.
There are a vast selection of cuts that are hard to find in the grocery store and the quality is deeply admirable.

Stopped by this gem yesterday. Dry aged ribeye was spot on. The burgers are unreal. Definitely will be a regular customer even from an hour away!
Josh Mow, 06 Aug 23, GoogleFor what you get the prices are quite reasonable in my opinion and the employees are friendly and helpful. Be warned, if you are buying meat at the grocery store there is no going back once you've shopped at Macelleria!
Adrian Vandenbout, 01 Mar 23, GooglePhillip and his team are friendly, knowledgeable, and willing to share lots of ideas and ways to better enjoy the meats from their great butcher shop. It's a highlight of our shopping week to visit, and they have ruined us from getting meats anywhere else.
Scott Gamble, 10 Aug 22, GoogleAmazing selection of meats. Really nice cuts. Very good flavor. Very fair prices. There are a vast selection of cuts that are hard to find in the grocery store and the quality is deeply admirable.
